Cook's tip

Dark soy is very dark, so start with less and add more while watching the colour. Tagliatelle or wide fresh rice noodles work if you can't find pappardelle. Pancetta is salty, so don't add extra salt; taste at the end.

Cooking it at camp

Boiling lots of water is hard at camp: use just enough water to cover the pasta in one pot and stir often. Mix the sauce at home and bring it in a jar; keep the pancetta and butter in the cooler. Cook pancetta, pasta and eggs one after another in a single pan to save on washing up.
