Cook's tip

Drying the potatoes properly is the key to crisp fries. In an air fryer, cook them at 200 °C for 18 to 22 minutes, shaking halfway. Short on time? Frozen fries work fine.

Cooking it at camp

At camp, crisp frozen fries in a well-oiled cast-iron pan, or wrap potato wedges in foil and roast them in the coals. Add the paneer and cheese, then cover with a lid to melt.
