Cook's tip
Make extra roasted curry powder: in an airtight jar it stays fragrant for a month. No pandan? Leave it out; cinnamon alone is still delicious. Add the lime only at the end so its freshness stays bright.
Cooking it at camp
Roast and grind the curry powder at home and it is no harder than the basic parippu on site. Carry the coconut can unshaken and spoon off the top cream. You can also fry the shallots at home and bring them in an airtight box.
