Pasta e Fagioli with Dried Borlotti and Parmesan Rind
Beans soaked overnight and simmered creamy with a Parmesan rind, part of them blended to thicken, finished with a sizzling rosemary-chilli oil.
Method
Rinse the dried beans and soak them in at least three times their volume of cold water for . They are ready when they have nearly doubled in size and the skins are smooth. In hot weather, soak them in the fridge.

Drain the beans and put them in a 20 cm pot with the fresh water, the bay leaves, the Parmesan rind and half the garlic, left whole. Bring to the boil over high heat, skim off the foam, then lower to low heat and simmer very gently for . A bean is done when it crushes to cream against the roof of your mouth. Salt only once they are tender, or the skins toughen. Never throw away the cooking liquid.

Cook's tip
The starch from the bean liquid and the savouriness of the rind are the whole point, so use that liquid instead of stock. No pasta mista? Break up the ends of several pasta packets and mix them, exactly as Italian homes do. Cook a big batch of beans and freeze them in their liquid; next time the soup takes 30 minutes.
Cooking it at camp
Cook the beans at home and carry them in their liquid in a sealed tub in the cooler, then start from step 3 at camp. The rosemary oil is easy in a small camping mug. Cook the soffritto out of the wind on a low flame so it does not scorch.
