Keema Pastitsio with Garam Masala Béchamel

Greek pastitsio with an Indian heart: ginger-garlic beef keema with peas, layered with pasta under a garam masala béchamel and sharp cheddar, baked until bubbling.

Method

  1. Heat the ghee in a wide pan over medium heat, add the cumin seeds and let them sizzle for 30 seconds until fragrant. Add the onion and cook, stirring, until golden brown, then add the garlic, ginger and green chilli for 1 minute ( in all). Golden onions are the backbone of a good keema, so don't rush them.

  2. Turn up to medium-high heat, add the beef and break it up with a wooden spoon; cook until browned and dry. Stir in the garam masala, turmeric and chilli powder and fry for 1 minute until fragrant ( in all).

  3. Add the passata, water and salt and simmer over medium-low heat for , stirring now and then, until thick and no longer watery. Stir in the peas for the last 3 minutes, then half the coriander.

  4. Meanwhile, bring the water to the boil with the salt in a 20 cm pot over high heat, cook the pasta for about (2 minutes less than the packet says) and drain well.

  5. Return the pasta to the pot off the heat, stir in the butter and let it cool for 2–3 minutes. Separate the eggs: stir the lightly beaten whites into the pasta with a third of the cheddar, and keep the yolks for the béchamel.

  6. Melt the butter in a saucepan over medium heat, stir in the flour for 2 minutes, then whisk in the milk a little at a time and cook, whisking, for until thick. Off the heat, add the garam masala, salt and another third of the cheddar, then quickly whisk in the yolks.

  7. Heat the oven to 180 °C. Butter a 20×15 cm baking dish and spread half the pasta over the base, then all the keema, then the rest of the pasta, pressing each layer level. Pour over the béchamel and scatter with the remaining cheddar.

  8. Bake in the oven for , until golden and bubbling. Rest for , then scatter over the rest of the coriander and cut into squares.

Cook's tip

Kashmiri chilli gives colour more than heat; if you can't find it, use a smaller amount of regular chilli powder. Lamb mince makes a richer, more traditional keema. Serve with a crisp cucumber and onion salad or a spoonful of mango chutney.

Cooking it at camp

Cook the keema at home and carry it chilled in the cooler; the béchamel is easy to make at the campsite in one small pot. Assemble in a Dutch oven and bake with about 14 coals on top and 7 underneath (around 180 °C), adding 10–15 minutes, then rest before cutting.
