Mango Coconut Lime Pavlova
Thai mango sticky rice flavours on a pavlova: coconut cream, ripe mango, lime zest, toasted coconut and sesame.
Method
Preheat the oven to 120°C. Draw one 12 cm circle on baking paper and turn it over onto a tray. Put the can of coconut milk in the fridge the day before.
Whisk the whites until foamy, then whisk at high speed for , adding the sugar 1 tbsp at a time, until glossy and stiff with no gritty sugar left.

Gently fold in the cornflour and lime juice. Spread the meringue into the circle as a round about 4 cm high and press a shallow dip in the middle for the cream.

Bake in the oven at 120°C for , until dry outside and easy to lift from the paper. Turn the oven off and leave it inside with the door ajar for .
ovenToast the coconut in a dry 16 cm frying pan over medium-low heat for , stirring constantly, until light golden and fragrant. Tip onto a plate at once to cool. It burns quickly, so stay with it.

medium-low heatCut the mango into 1.5 cm cubes and toss with half the lime zest. Whip the cream, the thick coconut cream and icing sugar for , stopping when it holds soft peaks.

Spread the coconut cream over the meringue, pile on the mango and scatter with the toasted coconut, sesame, remaining lime zest and a pinch of flaky salt. Cut and eat within 30 minutes.

Cook's tip
Choose full-fat coconut milk so the cream sets firm; save the thin watery part for a smoothie. If the mango is a little underripe, toss it with 1 tsp honey.
Cooking it at camp
Bake the meringue and toast the coconut at home, packing the meringue in a hard container. At the campsite, whip the cold cream from the cooler by hand, slice the mango and assemble.
