Picadillo
Cuba's everyday comfort dish: minced beef simmered in tomato sauce with salty olives and sweet raisins, served with fluffy white rice.
Method
Rinse the rice until the water runs clear and drain. Bring the water, oil and salt to a boil in a 16 cm pot over high heat, add the rice and boil uncovered. When the water has dropped to the surface and little craters appear, cover, turn down to low heat and cook for . Don't lift the lid.

low heatFluff the rice with a fork, spoon it onto plates and pile the picadillo alongside. In Cuba it often comes with black beans or fried sweet plantains.
Cook's tip
Olives and capers are salty, so adjust the salt only at the end. Leave out the raisins if you don't like sweet and salty together. Picadillo tastes even better the next day and keeps 3 days in the fridge or a month in the freezer.
Cooking it at camp
Everything except the rice cooks in one frying pan, in order: potatoes, sofrito, meat, so it suits a camp stove well. Cook the rice in a camping pot or heat pouches of ready rice. Keep the mince below 4 °C in the cooler and cook it on the first day.
