Cook's tip
Put the whipped feta down first; beetroot straight on the bread makes it soggy. If your feta is very salty, add a little more yogurt. The beetroot spread keeps 3 days in the fridge and doubles as a dip.
Cooking it at camp
Make the beetroot pkhali and whipped feta at home and pack them in separate tubs in the cooler. At camp, just toast the bread on a grill grate or in a pan on the stove and pile it on for an easy breakfast.
