Cook's tip
Use a mature, fairly dry cheese such as cheddar or aged gouda; very moist cheeses make the poffertjes heavy. Cheese that leaks out turns into delicious crisp lace; just loosen it with the skewer before flipping. Fold in finely chopped ham or crispy bacon bits for a heartier snack.
Cooking it at camp
Grate the cheese and slice the spring onions at home, mix the dry ingredients in a jar and add the milk, egg and melted butter at camp. Cook in a poffertjes pan, or as small coins in a non-stick frying pan, over medium-low heat on the burner. Keep the dairy in the cooler.
