Cook's tip

Season the rice while it is hot so it absorbs the vinegar, and cut rather than stir or the grains turn mushy. Add half the sriracha first and taste to set the heat. If you have flying fish roe, a spoonful in the spicy ahi adds a fun pop.

Cooking it at camp

Make the sushi rice at home, keep it in a sealed box somewhere cool but not in the cooler (it hardens when cold) and eat it the same day. Prepare the macadamia salt and both sauces ahead; keep the tuna in the coldest part of the cooler and cut and dress it just before eating.
