medium heatThinly slice the avocado and cut the cucumber into half-moons, then squeeze over the rest of the lime juice so the avocado doesn't brown.

Put the crispy rice in bowls, pile on the pol sambol and arrange the avocado, cucumber and halved jammy eggs around it. Mix everything together as you eat to get crunch and creaminess in every bite.
Cook's tip
If your rice is freshly cooked, spread it out and cool it for at least 30 minutes to dry it out. For 4 servings, fry in two batches if your pan is crowded, or it won't crisp. Canned tuna or grilled salmon makes it more filling.
Cooking it at camp
At camp, crisp the rice in a cast-iron pan for an even crunchier crust. Soft-boil the eggs at home and pack them in the cooler with the ready-made sambol, and the whole bowl takes 15 minutes on one burner.
