Cook's tip

Quinoa comes from the Andes, like this chicken, so the pairing is very Peruvian. Packed in a lunch box with the dressing separate, it keeps for 2 days in the fridge. For extra crunch, add a handful of toasted corn nuts or pumpkin seeds.

Cooking it at camp

Cook the quinoa and make the dressing at home, and carry them cold. At the campsite, grill the marinated thighs and the corn (or corn cobs) over medium coals, then build the bowls; slice the avocado just before eating so it doesn't brown.
