Cook's tip
Slightly stale croissants absorb the sauce best without turning to mush; fresh ones can be dried in a 150 °C oven for 5 minutes first. Brioche or panettone slices work the same way. Pour carefully: the hot sauce is very hot.
Cooking it at camp
Use a heavy lidded pan on the camp burner: simmer the sauce in the pan, nestle in the halved croissants, cover and cook on the lowest heat for 8 to 10 minutes until the bottoms caramelise. The tops won't crisp, but it's delicious with ice cream from the cooler.
