BBQ Pulled Pork Sweet Potato Boats

Whole roasted sweet potatoes split open and piled with BBQ pulled pork and corn, then baked under bubbling cheddar: a brunch-café plate.

Method

  1. Heat the oven to 160°C. Cut the pork into 4 cm thick slabs (thinner pieces cook faster), mix the rub ingredients and rub them all over the meat.

  2. Put the pork in a 18 cm ovenproof dish, pour in the apple juice and seal the dish tightly with foil, right to the edges. Cook in the oven at 160°C for . It is done when it pulls apart easily with a twisted fork.

  3. When there is left on the pork, scrub the sweet potatoes, prick them a few times with a fork, rub with the olive oil and put them on a tray in the same oven. They are done when a skewer slides into the thickest part with no resistance.

  4. Pull the pork apart with two forks and toss it with the barbecue sauce, 2–3 tablespoons of the juices from the dish and the corn.

  5. Turn the oven up to 220°C. Split the sweet potatoes lengthwise, fluff the flesh with a fork and season with a pinch of salt. Pile on the pork, cover with cheddar and bake in the oven for , until the cheese melts and bubbles.

  6. Top each boat with a spoonful of sour cream, scatter over the spring onion and jalapeño and serve warm.

Cook's tip

Large sweet potatoes need an extra 10–15 minutes. If you don't like heat, swap the jalapeño for sliced pickles. With leftover pulled pork, start at step 4 and it takes 20 minutes.

Cooking it at camp

Wrap the sweet potatoes in two layers of foil and bury them at the edge of the coals for 40–50 minutes; reheat pulled pork made at home in a pan. Split, fill, add cheese and close the grill lid to melt it.
