Cook's tip

Potatoes boiled the day before and chilled lose moisture and roast even crisper. Slice the cheese while it is cold so it cuts thinly. For a party, bring the pan to the table and pour the cheese over in front of everyone.

Cooking it at camp

Boil the potatoes at home; at camp, smash and fry them on both sides in a cast-iron pan with plenty of olive oil until crisp. Melt the cheese in a small pan over a low flame and pour it straight over.
