Raggmunk with Oven-Crisp Pork Belly and Brown Butter
Extra-crisp raggmunk made with squeezed potato, served with oven-crackled pork belly, nutty brown butter and sugar-stirred fresh lingonberries.
Method
Mix the lingonberries (still frozen is fine) with the sugar in a bowl and set aside, stirring every few minutes while you cook, until the sugar dissolves and the berries are glossy and juicy. This is Swedish rårörda lingon: fresher and tarter than jam.
Add in this stepLingonberries (frozen is fine, or cranberries) 80 gSugar (for the lingonberries) 20 g
Whisk the flour with a third of the milk until smooth, then whisk in the remaining milk, the eggs, salt and nutmeg. Rest the batter for .
Add in this stepPlain flour 60 gWhole milk 200 mlEggs 1Salt (for the batter) ½ tspNutmeg 1 pinch
Heat the oven to 200 °C. Pat the pork slices dry, season with the salt and pepper and lay them on a wire rack set over a lined tray. Roast for , turning halfway, until deep golden, crackling-crisp and cooked through. The rack lets the fat drip away so both sides crisp.
Add in this stepPork belly, cut into 1 cm slices 240 gCoarse sea salt ¾ tspBlack pepper to taste
ovenPeel and coarsely grate the potatoes, then squeeze them firmly in a clean tea towel over a bowl to remove about half the liquid. Stir them into the batter. Less water means crisper, more golden pancakes.
Add in this stepFloury potatoes 500 g
Heat a little clarified butter in a frying pan over medium heat. Add about 3 tablespoons of batter per pancake, spread thin to 10 cm and fry for per side, until lacy and deep golden. Fry in 3 batches, adding clarified butter each time; unlike ordinary butter, it takes the heat without burning.
Add in this stepClarified butter (or ghee) 25 g
medium heatMelt the butter in a small pan over medium heat and cook for , swirling, until it foams, turns hazelnut brown and smells nutty. Pour it into a cold bowl straight away so it doesn't burn.
Add in this stepButter (for brown butter) 25 g
medium heatServe the pancakes with the pork, spoon over the brown butter, add the stirred lingonberries and finish with snipped chives.
Add in this stepChives 5 g
Cook's tip
Ghee works perfectly as clarified butter. If you can't find lingonberries, use cranberries with a little more sugar. Keep finished pancakes in a single layer on a rack in a 90 °C oven so they stay crisp; stacking makes them soggy.
Cooking it at camp
At a campsite, roast the pork belly at home and reheat it in the pan, or fry thin slices straight in a cast-iron pan. Bring the batter cold in a bottle and the lingonberries pre-stirred in a tub, and brown the butter in a small pot at the end.
