Crispy Shoyu Ramen Noodle Pancake

Ramen noodles tossed with soy-glazed pork and spring onion, pressed flat and fried until shatteringly crisp, then topped with jammy eggs and spicy mayo.

Method

  1. Bring water to a boil in a 16 cm pot over high heat, lower in the cold eggs, turn down to medium heat and cook for exactly . Cool them in ice water for 5 minutes and peel.

  2. Bring 3 L of water to a boil in a large pot over high heat (about ). Shake the noodles loose and cook them for only , 30 seconds less than the packet says. Rinse in cold water to wash off the starch, shake dry in a sieve, then press with kitchen paper until as dry as possible. Wet noodles will not crisp.

  3. Heat 1 tsp of the oil in a 20 cm frying pan and fry the pork and garlic over medium-high heat for . Once no pink remains, add the soy sauce and mirin and stir until the liquid has gone and the pork looks glossy. Turn off the heat and let it cool a little.

  4. Beat the eggs for the mixture in a bowl, then add the noodles, pork, spring onions (keep a small handful for the top), potato starch and sesame oil and toss until every strand is coated. Divide into 1 portion(s).

  5. Heat half the oil for one pancake in a 24 cm non-stick pan over medium heat. Spread one portion in the pan and press it down hard with a spatula into an even layer 1.5 cm thick. Fry without touching for , until the underside is deep brown and crisp when you lift an edge.

  6. Put a plate over the pan and flip the pancake onto it, add the remaining oil to the pan and slide the pancake back in. Drizzle a little more oil around the edge and fry over medium heat for another until crisp on both sides. If you are making two, fry the second one the same way.

  7. Mix the mayonnaise and sriracha. Cut the pancake into 6 to 8 wedges like a pizza, top with the halved eggs and drizzle with the spicy mayo. Finish with nori snipped into thin strips, the reserved spring onion and sesame seeds, and serve straight away.

Cook's tip

Dry noodles and not touching the pancake for the first few minutes are the secrets to crunch. If flipping a big one feels daunting, make several small pancakes instead. Leftover chashu, chopped, is a great addition.

Cooking it at camp

Cook and drain the noodles at home and toss them in sesame oil so they do not stick on the way. Fry in a cast-iron pan over a medium burner flame, and use a large plate or pot lid to flip.
