Cook's tip

If the kimchi is very sour, add a little more sugar; if it is young, a drop or two of vinegar balances it. Fry rice in any leftover sauce for a treat. Serve with steamed rice or plain boiled noodles.

Cooking it at camp

At the campsite, cook it in the same order in a cast-iron pot or Dutch oven. Pack the kimchi in a sealed container in the cooler, and cut and blanch the pork at home to save time.
