Cook's tip

Wrap warmed tortillas in a clean tea towel so they stay soft. If corn tortillas crack, do as Mexican cooks do and use two stacked together. The beef is even better braised a day ahead; reheat and shred it the next day. For more heat, add sliced fresh green chilli.

Cooking it at camp

Shred the beef at home and pack it in its sauce in a sealed tub in the cooler. At camp just warm it in a pan and toast the tortillas straight on the grill or burner: an easy, crowd-pleasing camp meal. Make the pickled onion ahead too; it only gets better.
