Coconut Risalamande with Mango-Lime Sauce (Danish × Thai)
Rice pudding simmered in coconut milk, lightened with whipped cream and topped with a tangy mango-lime sauce and toasted coconut-almond crunch, inspired by Thai mango sticky rice.
Method
Put the rice and water in a heavy-based 18 cm saucepan, bring to a boil on medium-high heat, stirring, and let it bubble for , until most of the water is absorbed.

Set one whole almond aside and chop the rest coarsely. Toast the coconut and chopped almonds in a dry frying pan on medium-low heat for , stirring all the time, until light golden, then tip straight onto a plate to cool. Coconut burns in seconds, so don't walk away.

Add in this stepRipe mango 1Lime (juice and zest) ½Sugar 10 g
Whip the cold cream to soft peaks. Loosen the cold rice with a spoon, stir in half the crunch, then fold in the cream in two additions. Hide the whole almond, spoon into bowls and top with the mango-lime sauce, mango cubes and the rest of the crunch.
Add in this stepDouble (heavy) cream, cold 100 ml
Cook's tip
Full-fat canned coconut milk gives the richest, smoothest pudding. If your mango is not very ripe, add a little more sugar to the sauce. Thawed frozen mango works well too.
Cooking it at camp
Make the pudding and the crunch at home and carry them in a cooler below 5 °C. At camp, dice the mango, sprinkle with lime juice and sugar and mash it with a fork for a sauce without a blender.
