Method

  1. Beat the egg in a bowl, whisk in the coconut milk, water, turmeric and salt, then add the flour a little at a time until smooth and strain. Aim for slightly thicker than the classic batter, like pouring cream, so the baked cups hold firm. Let it rest while the chicken poaches.

  2. Put the chicken breast and salt in a 18 cm pot and add cold water to cover. Heat over medium-high heat until bubbles appear at the edge, then immediately turn to low heat, cover and cook for . When the thickest part reaches 74 °C or shows no pink when cut, lift it out, cool and shred with two forks. Gentle heat keeps it juicy.

  4. Heat a non-stick pan over medium-low heat and wipe it with an oiled paper towel. Fill a squeeze bottle with the batter and draw dense circles and crossing lines about 12 cm wide. As soon as the top sets (about 40 seconds), lift it out without flipping; it will finish in the oven, so take it out before it colours. Make 6 nets in .

  5. Gently press each net into a muffin hole, letting the edges ruffle up. Brush with the remaining oil and bake in the oven at 190 °C for , until golden and crisp. Leave in the tin for 5 minutes; they firm up as they cool.

  7. Mix the yoghurt, mayonnaise, curry powder, lime juice and honey in a bowl. Scrape the seeds from the cucumber and cut it into 5 mm dice, finely chop the red onion and chilli, then fold everything in with the shredded chicken and half the coriander. Taste and add a little salt if needed.

Cook's tip

Cooled cups stay crisp for 2 days in an airtight box; if they soften, warm them at 160 °C for 3 minutes. Poached prawns or chickpeas work well instead of chicken.

Cooking it at camp

Bake the cups at home and pack them in a rigid box; keep the salad cold in the cooler and fill at the campsite. With no oven, cook the nets a little longer in the pan until crisp and serve them flat like chips for scooping.
