Cook's tip

Mastic is very strong, so stick to the amount, or leave it out if you can't find it. A strip of lemon peel can replace the black lime. Fried onions stay crisp for two days in an airtight container.

Cooking it at camp

Make the broth and saleeg on the stove as written, and grill the ghee-brushed chicken over charcoal for extra flavour. Fry the onions at home and bring them in a sealed tub so you don't have to handle hot oil at camp.
