Honey-Soy Pork Belly Leek Roll Skewers

Thin pork belly rolled around chunks of green onion, skewered, griddled golden and brushed with a glossy honey-soy glaze: the perfect campfire snack.

Method

  1. Soak bamboo skewers in water for 20 minutes so they don't burn. Cut the white and pale green parts of the green onion into 4 cm lengths: you need 12 pieces.

  2. Lay out a slice of pork, sprinkle lightly with salt and pepper, put a piece of onion at one end and roll it up tightly, at least two turns. Place them seam-side down and thread three onto each skewer, piercing through the seam so they don't unroll on the grill.

  3. Put the soy sauce, honey, garlic and water in a small 16 cm pot (a camp pot is fine), bring to a boil over medium heat, then reduce over low heat for . When the bubbles turn small and close together and it thickens slightly like syrup, turn off the heat.

  4. Heat a 28 cm griddle over medium-high heat for , until a drop of water balls up, skates around and vanishes. On charcoal, wait for the coals to be covered in white ash and aim for a hand held 10 cm above the grate lasting 4 to 5 seconds.

  5. Lay the skewers on and cook over medium heat for , turning every 2 minutes to brown all sides. Cook this amount in 1 batch(es). They are done when the pork is golden and crisp, the onion yields softly to a chopstick, and there is no pink inside the seam. On charcoal, if the fat catches fire, move the skewers to the edge for a moment.

  6. Turn the heat down to medium-low heat and brush the skewers with the honey-soy glaze, turning, for . Honey burns quickly, so don't walk away. When the surface is sticky and glossy, plate and sprinkle with sesame seeds, scallions and chili flakes if you like.

Cook's tip

No thin-sliced pork belly? Half-freeze a regular piece and slice it as thinly as you can; it rolls easily. Enoki mushrooms or asparagus are delicious instead of green onion. Glaze only at the end: brushed on from the start it burns before the pork is cooked.

Cooking it at camp

Roll and skewer at home, pack in a sealed tub in the cooler, and at camp all you do is grill. Cook straight on the grate over charcoal, or on the griddle over a burner. Steel skewers need no soaking, but the handles get hot, so wear a glove.
