Chicken Satay Tacos with Acar Pickles

Indonesian satay meets Mexican tacos: sticky kecap manis chicken in warm corn tortillas with peanut sauce, crunchy quick pickles and lime.

Method

  1. Make the acar (Indonesian quick pickle): cut the cucumber and carrot into thin 5 cm matchsticks and slice the red onion thinly. Toss with the rice vinegar, sugar and salt and leave for , tossing once, until slightly softened.

  2. Cut the chicken into strips about 1 cm wide and 5 cm long. Mix with the kecap manis, grated garlic, ground coriander, cumin and half the oil, and leave for while you make the sauce.

  3. In a bowl, whisk the peanut butter, kecap manis, lime juice and sriracha, then whisk in the hot water a spoonful at a time until smooth and pourable, like thick cream.

  4. Heat the remaining oil in a 26 cm frying pan over medium-high heat until shimmering. Spread the chicken in a single layer (cook in two batches if it does not fit) and leave it for 2 minutes before stirring; cook for in total, until browned with no pink left. Pour in any marinade left in the bowl and toss for , until sticky and glossy.

  5. Wipe the pan and warm the tortillas one at a time in the dry pan over medium heat, per side, until soft and lightly spotted. Stack them wrapped in a kitchen towel so they stay pliable.

  6. Fill each tortilla with chicken, a handful of drained acar, a drizzle of peanut sauce, chopped peanuts and cilantro. Squeeze over lime, fold in half and eat right away.

Cook's tip

Corn tortillas crack when cold, so always warm them and keep them wrapped. Double them up if they are thin. Natural peanut butter may need a little more water; with sweetened peanut butter, use less kecap manis in the sauce.

Cooking it at camp

A one-pan camp dinner: pickle the acar at home in a jar and marinate the chicken in a zip bag in the cooler. Sear on the burner and warm the tortillas directly on a grate over the coals for a few seconds per side.
