Cook's tip

An apple works instead of the pear, and a pinch of Korean chilli flakes adds gentle heat. Made a day ahead, chilled, skimmed and reheated, it tastes even deeper. Leftover sauce stirred through rice is a treat.

Cooking it at camp

Braise it at home and carry it in a sealed container in the cooler; at the campsite, reheat it gently in a pot or Dutch oven until piping hot. If you bring the raw marinated beef, keep it below 5 °C and cook it on the first day.
