Cook's tip
Constant stirring releases the starch that makes risotto creamy without any cream. Add the coconut milk at the end so its fresh flavour survives. Scatter the tempeh on just before eating so it stays crisp.
Cooking it at camp
It works on one burner, but you'll be stirring the whole time, so a windshield is essential. Use a stock cube dissolved in hot water, fry the tempeh at home and pack it airtight, and bring a small carton of coconut milk.
