Cook's tip
Add the chiura at the very last moment or it goes soft. Leftover rice is perfect: reheat it in the microwave with a splash of water. For more heat, stir an extra pinch of timur into the yoghurt.
Cooking it at camp
Marinate the chicken at home in a zip bag, and fry the chiura at home and pack it airtight so it stays crisp. At the campsite you only need to grill the chicken over charcoal or in a cast-iron pan.
