Cook's tip
No waffle iron? Cook the same batter as small pancakes in a non-stick pan. Rice-flour waffles are crispest straight from the iron, so cook just before eating; leftovers re-crisp in a toaster. Maple syrup works in place of honey.
Cooking it at camp
Mix the dry ingredients at home in a zip bag; at camp add only banana, egg and milk. A stovetop waffle iron or a cast-iron pan for small pancakes works on a camping stove. Keep the yoghurt cold in the cooler.
