Cook's tip
Freshly cooked rice turns mushy, so use cold leftover rice or thawed frozen rice. Harissa brands vary a lot in heat: add half, taste, then add more. The oil must be properly hot before the eggs go in to get crisp, lacy edges.
Cooking it at camp
Make the fried rice in one large cast-iron pan, push it aside and fry the eggs in the free space, so one burner is enough. Cook and chill the rice at home and pack it in the cooler, along with the ready-mixed garlic yogurt.
