Shepherd's Pie Loaded Jacket Potato

A crisp-skinned baked potato split and stuffed with lamb in gravy, then piled high with cheddar mash and baked again until bubbling.

Method

  1. Preheat the oven to 200°C. Scrub the potatoes, dry them and prick each one 6 to 8 times with a fork. Rub with a thin coat of oil and sprinkle with coarse salt. Put them straight on the oven rack and bake in the oven for . They are ready when the skin is crisp and a skewer slides into the centre with no resistance.

  2. While they bake, cut the onion and carrot into 5 mm dice and chop the garlic. Heat a 20 cm frying pan over medium-high heat, add the lamb and cook for , breaking it up with a spatula, until browned. If there is a lot of fat, spoon it off, leaving 1 tablespoon.

  3. Add the onion, carrot and garlic and cook over medium heat for until soft, then stir in the tomato purée and flour for 1 minute. Add the stock, Worcestershire sauce and thyme, and simmer over medium-low heat for , until thick enough to coat a spoon. Stir in the peas and season with salt and pepper.

  4. Take the potatoes out, cut them in half lengthways and let them cool for 5 minutes. Scoop the flesh into a bowl with a spoon, leaving a 5 mm wall so the skins don't tear. Mash the flesh with a fork together with the butter, sour cream, half the cheddar, salt and pepper. Turn the oven up to 220°C.

  5. Set the potato skins on a baking tray, pack them with the lamb filling and pile the cheesy mash on top, roughing it up with a fork. Sprinkle with the rest of the cheddar and bake in the oven at 220°C for , until the cheese is melted, bubbling and golden.

  6. Finish with chives, a grind of black pepper and, if you like, an extra spoonful of sour cream. Serve hot.

Cook's tip

Don't wrap the potatoes in foil or cling film, or the skins won't crisp. Short on time? Microwave them for 8 to 10 minutes until tender, then crisp in the oven for 15 minutes. Any leftover filling freezes well for next time.

Cooking it at camp

Wrap the potatoes in two layers of foil and bury them at the edge of the embers for 40 to 60 minutes, turning now and then. The skins won't be crisp, but split them, add the warmed filling and cheesy mash, and cover with a pan lid just long enough to melt the cheese.
