Cook's tip

Use full-fat cream cheese at room temperature, or the filling will be lumpy or won't set. Warm the spread only until pourable, not hot, or it will melt the cream. The cups keep for 2 days covered in the fridge; add the drizzle and crumbs just before serving so they stay crisp.

Cooking it at camp

Make them at home in jars with lids and carry them upright in a well-iced cooler; keep below 5 °C and eat on the first day. Bring the topping crumbs in a separate bag and add them at the campsite.
