  3. Drain the potatoes and carrots, shake them in the pot for 1 minute to steam dry, then mash, a little smoother than normal stoemp so the cakes hold together. Mix in the leeks, cheese, half the flour, the nutmeg and pepper and let it cool slightly. With wet hands, shape 4 round cakes 2 cm thick and chill for . Cold cakes don't fall apart.

Add in this stepMature cheddar, grated 60 gPlain flour 1 tbspGround nutmeg 1 pinchBlack pepper to taste

  4. Lay the bacon in a large 26 cm frying pan without oil and cook on medium heat for until crisp. Lift out the bacon and leave the fat in the pan.

  5. Dust both sides of the cakes with the remaining flour. Add 75% of the oil to the bacon fat and heat on medium heat until a scrap of potato sizzles at once, then fry the cakes for per side. Don't flip until the first side is deep golden. For 3 to 4 servings, fry in two batches so the pan isn't crowded. Lower the cakes in away from you, as the fat may spit.

Cook's tip

Leftover stoemp from the day before is drier, so it binds and crisps even better. If the cakes crumble, work in a little more flour and chill again. Gruyère or aged Gouda can replace the cheddar.

Cooking it at camp

Shape the cakes at home, stack them between baking paper and carry them in the cooler, so at camp you only need to fry. Cook bacon, cakes and eggs in that order on a cast-iron pan or griddle.
