Cook's tip
Fine chili flakes give colour and body; coarse ones give a cleaner heat. For 3 or 4 servings, split it between two earthenware pots so every bowl arrives piping hot. Soak clams in salted water for 30 minutes to purge any sand.
Cooking it at camp
Make the stock at home and bring it in a bottle or flask; it cuts 15 minutes from the campsite cooking. Keep clams in the cooler under a damp paper towel, and use a thick-bottomed camp pot instead of earthenware.
