Cook's tip
A thermometer makes it easy to keep the broth at 90 to 95 °C without boiling, and the meat stays far juicier. If the chive sauce splits, start again with a little mustard in a clean bowl and whisk the split sauce in bit by bit. Rösti or buttered potatoes make a good side.
Cooking it at camp
Make the broth, beef and chive sauce at home and pack them in the cooler. At the campsite, reheat the beef in its broth over low heat and warm the rye bread and marrow on the grill. Keep the egg-based sauce below 5 °C and eat it the same day.
