Chicken Tagine with Lemon and Olives
A Moroccan stew of spice-marinated chicken slowly cooked with preserved lemon and olives.
Method
Toss the chicken with the spices, minced garlic, salt and half the oil and marinate for 30 minutes.

Heat the remaining oil in a tagine or heavy pot and brown the chicken skin side down over medium-high heat. Brown this amount in 1 batch(es), in total.

Cook's tip
If you have no preserved lemon, use lemon zest, lemon juice and a pinch of salt.
Cooking it at camp
This dish suits a Dutch oven well. Keep it on low heat with about 8 coals on the lid and 10 underneath.
