Cook's tip

Rice cooked the day before and chilled is drier and crisps even better. Once cooled, the crispy rice stays crunchy for a day in an airtight container, so you can bake it ahead and just toss before eating. Use the tender herb stems too.

Cooking it at camp

Bake the crispy rice at home and bring it in an airtight box, with the vegetables and herbs in the cooler. On site you only chop and toss, so no fire is needed. To crisp the rice at camp instead, press it into an oiled cast-iron pan and fry both sides over medium-low heat.
