Method

  1. Peel the potatoes and slice them 4 mm thick; if you use a mandoline, always use the hand guard. Don't rinse them: their starch thickens the sauce. Put the potatoes, milk, cream, smashed garlic, thyme, nutmeg and salt in a wide 20 cm pan. Bring to a gentle simmer on medium heat, then turn down to medium-low heat and cook for . Milk catches easily, so stir gently from the bottom with a spatula, and stop when the potatoes are tender but still hold their shape.

Cook's tip

Patiently caramelised onions are what make this version special. Pre-cooking the potatoes in milk means they're creamy right through after a short bake. The sharp salad cuts through the rich cheese.

Cooking it at camp

Poach the potatoes in milk at home, cool them in a sealed container, and caramelise the onions ahead too. At camp, layer everything in a Dutch oven, top with the cheese and heat with coals under and on the lid for 15–20 minutes. Shake the dressing up in a small jar.
