Cook's tip

Put the mayo in a small plastic bag and snip off a tiny corner for thin, neat lines. Overcooked eggs turn dry, so take them out when they still look a little underdone. A light sprinkle of shichimi lifts the whole bowl.

Cooking it at camp

A great camping bowl over pot-cooked or ready rice. Cut the chicken and coat it in starch at home, pack it in a sealed tub in the cooler and premix the sauce; then one pan does egg first, chicken second in about 10 minutes.
