Cook's tip
The dressing keeps for 3 days in the fridge; it thickens as it chills, so loosen it with a spoonful of water. For a vegetarian version, use crispy pan-fried tofu instead of chicken. Eat within an hour of tossing so the vegetables stay crunchy.
Cooking it at camp
Ideal for a hot day at camp: poach the chicken and mix the dressing at home, pack everything separately in a well-iced cooler and only cook the noodles on site, rinsing them in cold drinking water. It also travels well as a lunch box.
