Cook's tip
Pipe the cream only when the cupcakes are completely cool so it doesn't melt. No piping bag? Snip the corner off a zip bag, or simply spoon the cream on in a heap. Un-topped cupcakes keep for 2 days in an airtight box.
Cooking it at camp
Bake and fill the cupcakes with jam at home and pack them in an airtight box. Whip the cream ahead into a zip bag and keep it in the cooler; at the campsite, snip the corner, pipe and add the raspberries. Eat them as soon as they are topped.
