Add in this stepCherry tomatoes 120 gCucumber ½Red onion ¼Ripe avocado 1Fresh coriander (cilantro) 10 g

Cook's tip

The waakye can be cooked a day ahead and refrigerated (cool cooked rice quickly and never leave it out for more than 2 hours). Cut the avocado just before serving so it doesn't brown. For more protein, add grilled chicken or a boiled egg.

Cooking it at camp

Cook and cool the waakye at home, pack it in a sealed tub in the cooler, and just chop and toss the vegetables and dressing at camp: a no-flame meal that is great on hot days. Keep it below 5 °C and eat it the same day.
