Cook's tip

If the béchamel is too stiff to spread, loosen it with milk a tablespoon at a time. Without the egg it becomes a croque monsieur. Pickles on the side bring out the tang.

Cooking it at camp

At camp, make the béchamel at home and carry it in a jar. Toast the sandwiches in butter on both sides in a lidded pan over low heat, then spread the béchamel and cheese on top and cover to melt. Fry the eggs in the same pan alongside.
