- Flavor and role
- A carbonated fermented drink made from barley malt. In frying batter the bubbles make it light and crisp; in braises it adds a bitter savouriness.
- Typical dishes and uses
- Fish and chips batter, Belgian carbonnade, beer can chicken, mussels steamed in beer
- Substitutes
- For batter: the same amount of ice-cold sparkling water. For braises: stock + a little malt vinegar.
- Storage
- Unopened 6–12 months in a cool place. Once opened it goes flat, so use the same day; keep beer for batter cold until just before use.
