Crispy Aloo Gobi Bites Tray with Lemon-Coriander Yogurt
A sharing tray of spice-battered cauliflower and cumin potato wedges, oven-roasted until crunchy and dunked in a lemony cilantro yogurt.
Method
Preheat the oven to 220 °C · 1× (temperature · number of trays) and line the tray with baking paper. Scrub the potatoes, cut them skin-on into 2 cm wedges, pat dry and toss with part of the oil, the cumin and part of the salt. Spread them, cut side down, on one side of the tray and roast at oven for first, because potatoes take longer than cauliflower.

Cook's tip
A crowded tray steams instead of crisping: leave a finger's width between pieces. In an air fryer, cook the potatoes at 200 °C for 10 minutes, then add the cauliflower for 12 to 14 minutes more. If the batter is runny, add 1 tbsp more flour.
Cooking it at camp
Without an oven, use a lidded cast-iron skillet with plenty of oil: cook the potatoes first on low, turning, then add the battered cauliflower, cover and fry until crisp. Keep the yogurt dip in the cooler.
