Aloo Gobi (Spiced Potato and Cauliflower)
Punjab's everyday dry curry: potato and cauliflower cooked slowly under a lid with cumin, ginger, tomato and turmeric until tender and golden.
Method
Cut the cauliflower into florets about 4 cm across, rinse and drain them well. Peel the potatoes, cut them into 2.5 cm cubes and keep them in a bowl of water so they don't brown. Finely chop the onion and tomato, grate the ginger and garlic, and slit the green chili lengthwise.
Heat the oil in a 24 cm wide pan that has a lid over medium heat. Add the cumin seeds; when they sizzle and darken slightly (about 20 seconds), add the onion and fry for , stirring, until soft and light golden.

Cook's tip
Fold rather than stir: vigorous stirring breaks the cauliflower into mush. Drain the cauliflower well so it browns instead of steaming. If the potatoes are still firm when the cauliflower is done, add 1 tbsp of water, cover and give them 3 more minutes.
Cooking it at camp
Cut the vegetables at home and pack them in a zip bag with a damp paper towel. On a camp burner, use a lidded skillet, keep the flame low and fold often, because thin camp pans scorch easily. Leftovers make a great wrap filling the next morning.
