Green Curry Coconut Arroz con Pollo (Colombian × Thai)
Colombian chicken rice meets the coconut rice of the Caribbean coast and Thai green curry, lemongrass and makrut lime leaves in one fragrant pot.
Method
Rinse the rice until the water runs almost clear and leave it to drain. Cut the chicken into 3 cm pieces. Bash the lemongrass with the back of a knife and cut it into 5 cm lengths, slice the onion thinly, chop the garlic and cut the pepper into 1 cm strips. Pull the centre stems from the lime leaves.
Heat the oil in a 22 cm pot with a lid over medium heat and fry the curry paste for , until fragrant. Add the onion, garlic and lemongrass and stir together, keeping everything moving so the paste doesn't burn.

Cook's tip
Green curry pastes vary hugely in heat, so start with a little less and taste. For a milder pot, add 50 ml more coconut milk and use 50 ml less stock. A lightly crusted bottom is a bonus, not a failure.
Cooking it at camp
Curry paste and canned coconut milk keep without refrigeration, so they travel well. Cut the chicken at home and keep it in the cooler; use a heavy-based pot and a windscreen to hold a steady low flame.
