Cook's tip

If the peppers wobble, shave a very thin slice off the base to flatten them without making a hole. Leftover arroz con pollo turns this into a 20-minute dish: skip steps 2–4 and fill straight away.

Cooking it at camp

Without an oven, put the peppers in a lidded cast-iron pan or Dutch oven over low heat and cover for 15–20 minutes so they steam-bake; a few coals on the lid help the cheese melt. Make the filling at home and bring it in the cooler.
