Creamy Avgolemono Chicken Orzo Skillet with Feta and Dill
A one-pan dinner: orzo cooked like risotto and turned silky with avgolemono's egg-lemon sauce, finished with salty feta and plenty of dill.
Method
Cut the chicken into bite-sized pieces and season with salt and pepper. Heat the olive oil in a deep 26 cm pan over medium-high heat, spread the chicken out and sear for , without moving it too much, until golden outside. It does not need to be cooked through yet; set it aside on a plate.

Cook's tip
No orzo? Use another tiny pasta such as ditalini, or broken spaghetti. If the sauce gets too thick, add a splash more hot stock. When reheating leftovers the next day, add a little stock to bring back the creaminess.
Cooking it at camp
At camp, a stock cube, a bag of orzo and chicken you cut at home are all you need for one cast-iron pan. Wind slows the simmer, so keep the lid on. You can also add the eggs off the heat and stir them in using the pan's residual heat.
