Cook's tip

Freshly cooked rice turns mushy: use day-old rice, or spread fresh rice on a tray to cool for 15 minutes. If you have leftover bak kut teh, shred the rib meat in and use its broth for the shot. Pepper is the star here, so don't cut it back.

Cooking it at camp

Marinate the pork at home and pack it in the cooler with pre-cooked, cooled rice. On one burner, make the garlic chips, then the fried rice, and finally warm the broth in the same pot.
