Cook's tip

The broth deepens overnight: make it a day ahead, chill, lift off the set fat and reheat for the clearest result. The rock sugar isn't for sweetness but rounds off the pepper's edge, so don't skip it. Squash the soft garlic into the broth as you eat.

Cooking it at camp

Soak, blanch and toast the pepper at home, and keep the ribs and bones in a well-iced cooler. It needs over 1½ hours, so use a heavy Dutch oven on the lowest flame with a windshield and bring plenty of fuel. Cook the garlic rice on the same burner once the broth is done.
